Strawberry Parfait Tofu Dessert Recipe

Tofu Dessert
This strawberry parfait tofu dessert recipe balances the flavors of vegan ricotta and rich, ripe, fragrant strawberries and almonds. It is delicious. It’s like strawberry cheesecake in a parfait glass. You are sure to love it and your guests will never guess it is a tofu dessert.

First, make sure you have the ripest, darkest, ruby red strawberries available for this dessert. I am a stickler for ripe, quality fruit. It makes all the difference in the recipes you prepare. My husband advises that unless you can smell the strawberries' sweet fragrance they are probably not worth buying…and I agree.

To create this dessert, you must first make the ricotta, then cut the strawberries, chop the almonds and finally assemble the parfaits. Chill, serve, eat and enjoy.

Recipe for Strawberry Parfait

Preparation time: 30 minutes. Makes 2 parfaits.

Tofu Ricotta Recipe

Ingredients for tofu ricotta (makes 2 cups):

½ lb soft tofu
½ cup pine nuts
4 tablespoons honey
1 tablespoon sweet miso dissolved in 1-2 tablespoons purified water (I have used brown rice miso and the ricotta turned out fine.)
½ teaspoon natural vanilla flavor
¼ teaspoon freshly ground nutmeg

First, puree pine nuts in food processor with a little water (approximately 2 tablespoons) to make a smooth creamy mixture. Add remainder of ingredients and puree until still slightly lumpy, like the texture of ricotta.

Remaining ingredients for strawberry parfait recipe:

8 large strawberries diced into medium pieces
¼ cup freshly roasted almonds, finely chopped

Spoon 1/3 cup of ricotta into the bottom of parfait glass, layer with 1/6 of the strawberries and 1/6 of the almonds. Add another layer of ricotta, strawberries and almonds. Finally, spoon remaining 1/3 cup of ricotta on top and sprinkle with remaining strawberries and almonds.

This strawberry cheesecake in a glass is sure to please, not only your taste buds, but also your health. To your health!
