Strawberry Mousse - Strawberry Dessert Recipe

Strawberry Mousse
Alan thinks this strawberry mousse is delicious. Fortunately, here in Florida we have fresh strawberries from December through May with peek production in March and April. So we have lots of opportunities to enjoy this delicious strawberry dessert recipe.

Before we get to the recipe, here’s some more trivia about strawberries. Florida is second in production to California which produces 75% of the strawberry crop grown in the US. People the world over love strawberries, fresh and frozen. Per capita Americans eat about 3.4 pounds of fresh berries per year.

There is really nothing like a sweet, fresh, heart shaped strawberry. It was once said about this berry, which is a member of the rose family, "Doubtless God could have made a better berry, but doubtless God never did." (Dr. William Butler, 17th Century English Writer).

Not all strawberries are created equal however. Some are tart, some sweet, some in between. The outside flesh ranges from dark ruby red to an orangey red. The inside flesh varies from dark red to white. Alan, my husband, the strawberry connoisseur, says “the nose knows” and will only buy strawberries that have a fragrant, sweet, strawberry aroma.

When purchasing strawberries for this strawberry dessert recipe, I look for those strawberries that are dark, ruby red, preferably shiny and of course exceptionally fragrant. I have found that strawberries with these qualities have the most robust strawberry flavor which you definitely want in a strawberry mousse.

Serve it to your guests; they will never guess it is made with tofu!

Strawberry Mousse Recipe

Preparation time 10 minutes

Makes 2 servings

Ingredients:

2 cups tofu ricotta
1 tablespoon honey
8 large, very ripe strawberries - chunked
2 extra strawberries for garnish
6-8 soaked almonds finely chopped

Place 2 cups tofu ricotta in food processor with S blade, add honey and 8 strawberries. Puree until smooth. Pour mousse mixture into parfait glasses, garnish with extra strawberries and sprinkle with finely chopped almonds.

Serve your strawberry mousse recipe chilled. Enjoy!
