Here's a great Spinach Salad recipe with homemade Honey Dijon Dressing.
Serves 6
1 bunch spinach
1 avocado
1 nectarine
1 tablespoon olive oil
2 tablespoon orange juice, peach nectar or water
2 tablespoon cider vinegar
1 tablespoon dijon mustard
1 tablespoon honey
1/4 teaspoon salt
2 teaspoons fresh oregano, chopped
1. Wash spinach carefully. Remove stems and tear larger leaves into bite-sized pieces.
2. Halve, slice then chop nectarine, and peel, slice and chop avocado. Toss with spinach in a serving bowl.
3. To make dressing: Combine oil, juice, vinegar, mustard, honey, salt and oregano in a small container with a tight lid. Cover and shake vigorously until ingredients are well combined, about 2 minutes. Pour over salad and toss just before serving.
Tips:
Pre-washed spinach takes less time to prepare your salad.
The dressing may be prepared ahead of time and held until the meal is ready to be served - simply reshake before dressing the salad.
To lower the fat content of this dish, cucmber may be used in place of the avocado.
