Spelt Pancakes

For a different taste treat, try adding 2/3 cup of your favorite dried fruit, diced proportionately, to the mix. Some choices to consider are blueberries or raisins.

Yield: (20) 4-inch pancakes

3 cups Pancake Muffin Mix (1 bag)
2 tbsp. honey
2 tbsp. vegetable oil
2 egg whites
2 1/2 to 3 cups skim milk

Preheat griddle to 400 degrees; griddle is ready when small drops of water sizzle and disappear almost immediately.
Combine mix, milk, egg whites and oil in a bowl and stir until smooth. Thickness of pancakes can be controlled by changing the amount of milk added to the recipe.
Pour the batter onto hot, well greased griddle.
Turn pancakes when tops are covered with bubbles and the edges begin to dry.
