A Simple Red Cabbage Recipe

If you prefer, you can substitute green cabbage in this red cabbage recipe. However, I love to use red cabbage because of its color and high vitamin C content. You can feel great about eating red cabbage because of all the wonderful health benefits associated with cruciferous vegetables.

This recipe is quick, easy and inexpensive. We make it nearly every week and hope that you will also enjoy it as much as we do.

Simple Red Cabbage Recipe

Preparation time: 5 Minutes

Serves 6-8 as a side dish

Ingredients

1 medium head red cabbage
½ cup Basic Cole Slaw Dressing Recipe

Remove outer leaves of cabbage and rinse the head. Cut cabbage into wedges that will fit easily into the feed tube of your food processor. Using the slicing disc blade, gently feed cabbage into food processor and slice as thinly as possible (the less pressure you use the thinner it will slice).

Place sliced cabbage into large bowl and gently toss with Cole slaw dressing recipe. Place in bowl, cover and refrigerate. This red cabbage recipe will keep for 5 days or more in your refrigerator. So make it at the beginning of the week like I do and you will have a nice side raw/living food side dish for all your meals.
