Rich Pesto Pasta Recipe
Pesto is a rich, delicious and most importantly a healthy sauce. Whether you use basil or spinach pesto the dark green leaves used to create it are good sources of vitamin A, calcium and potassium as well as antioxidants and flavanoids: cancer fighting ingredients. They also produce an alkaline body environment which helps in keeping your immune system strong.
We enjoy this simple recipe with both basil and spinach pesto. It was inspired by an entrée we had at the 5th Avenue Café in Mount Dora, Florida. The 5th Ave Café is located in central Florida and serves all organic foods and clean meats (those that have not been feed antibiotics, hormones and pesticides.) They also offer many vegan dishes. The food is absolutely delicious; the atmosphere is relaxing and the service outstanding.
Because the pesto we use in our recipe is made without cheese, it makes for a great vegan recipe.
Rich Pesto Pasta Recipe
Preparation time: 10 Minutes
Serves 4
Ingredients:
1 Cup basil or spinach pesto made with walnuts
Whole Wheat penne Pasta enough to serve 4
1 Clove minced garlic
Olive oil to toss pasta
4 tablespoons finely ground walnuts
Boil penne pasta until al dente just firm to the touch and drain well. Toss pasta with a little olive oil and the minced garlic. Next, toss the pasta with pesto sauce and divide onto plates. Sprinkle each serving with one tablespoon ground walnuts. Serve Rich Pesto Pasta recipe with a toss salad. Enjoy!
