Peach Popsicles

Right now while fresh peaches are in season --
wash about six organic fresh peaches well and cut in quarters, leaving the peel on.
Add a few tablespoons of fresh lemon juice.
Liquify in blender. It will be a thick sludge.
Pour into popsicle molds and freeze.
Unmold and store in plastic bags in freezer.
This is truly simple to make and a terrific treat!

These usually are on sale at the beginning of summer. Generally they make units of four popsicles.
I buy enough to make 12-16 popsicles at a time.
The grandkids seem to like these as well as the "store bought" kind on a hot summer day and they certainly are healthier!
Instead of using the plastic handles that come with the molds (that invariably get lost anyway) I buy popsicle sticks in bulk. These are called "wooden craft sticks" (unpainted) and you can usually find them in lots of about 200-250 for $1 at dollar stores or on E-Bay. Using these, I can make dozens of popsicles to keep in the freezer stored in batches of 6 in freezer bags. When you pour them into the molds, check them in about an hour to make sure the sticks are still standing up straight!
Other organic fruits which are great alone or in combination:
Strawberries (you can leave the leaves on if you have a Vitamix or BlendTec blender), cherries (pit them first), kiwi fruit, plums, pineapple and mango. I haven't been as happy with blueberries or raspberries however. A little lemon juice seems to help preserve the color. Experiment!
Strawberries and cherries make the sweetest ones. Peach popsicles are a bit more subtle in flavor. Adding some banana adds sweetness and richer texture to any popsicle.
