Brown Rice & Lentils Recipe

Here’s the newest staple to our vegan, whole food diet – brown rice and lentils recipe. This dish was inspired during one of our many trips to our favorite Lebanese restaurant that we discovered a couple of years ago – Cedars in Melbourne, Florida. We loved the recipe so much and it was so simple that we decided to make it as often as we could, that is, and still be able to enjoy it at our favorite restaurant.

This is such a simple and economical recipe that we make a big batch of it about every other week. Although it’s obviously not raw, it is extremely nutritious. But the best part is, it only takes about 5 minutes to assemble the ingredients and then you just let it simmer on your stovetop for about 50 minutes. Brown Rice and Lentils Recipe Ingredients:

1 Cup brown rice – rinsed
1 Cup lentils – rinsed
½ teaspoon allspice
½ teaspoon sea salt
2 large cloves garlic minced
1 medium onion sliced

Heat a large, heavy duty, frying pan or Dutch oven with a lid over medium heat. Sautee the onions in a little olive oil until they are translucent. Add the remaining ingredients to the pan plus 3 cups of water. Bring to a boil, then turn down to low, cover and simmer for 50 minutes.

Serve with a green salad and you will have a simple, but hearty and nutritious meal that will serve 4-6 generously.
