Healthy Lunch Ideas

Alan and I eat lunch together every day. We need healthy lunch ideas that are quick and easy, but will also give us sustained energy for the rest of the afternoon. We have found that eating a lot of heavy, cooked food for lunch will often make us tired.

With our schedules we can’t afford to be tired in the afternoon. On this page we share with you our healthy lunch tips.

Healthy lunch ideas tip #1 plan ahead. So we always make sure that we have the ingredients we need on hand. Here are some of our quick and easy vegetarian recipes for healthy lunches.

Healthy lunch ideas tip #2 keep salads on hand. We always keep salads on hand in the frig: broccoli salad and red cabbage coleslaw are our favorites. We also keep prepared green leaf and/or romaine lettuce handy in a salad bowl. Then we have the base ingredient for a toss salad anytime we would like one.

Healthy lunch ideas tip #3 Alan’s bean burrito. We always have our pantry stocked with several cans of Annie’s Black Bean Refried Beans. They are the best we have ever tasted. He places about ¼ cup beans in a whole wheat tortilla and warms in the microwave. He may also add onions, peppers or sprouts for variety. As a side dish he will have salad. This is about as quick easy vegetarian recipe as you will find.

Jean prefers as much raw food at lunch as possible, so she normally eats salads which are already prepared ahead of time. Occasionally she will make a raw vegetable burrito by filling a whole wheat tortilla with sprouts, shredded carrots, zucchini and avocado. She squirts 1 teaspoon flax seed oil and a dash of herbemare on the veggies before wrapping it up.

Healthy lunch ideas tip #4 fresh fruit. Finally, we keep a big bowl of seasonal fruit on our kitchen table. It makes for a beautiful edible centerpiece and a quick and easy lunch or snack. The normal variety of fruit in our bowl includes bananas, apples, pears, clementines, papaya and kiwi depending on the season. Once the papaya ripens I peel and slice and keep in the frig ready to eat whenever I have the urge. When the bananas get very ripe we make smoothies, another quick easy vegetarian recipe.
