Granola Chocolate Chip Cookies Recipe
These delicious granola chocolate chip cookies are a bit of a process to make, but they are well worth the time. To make them healthy, they contain no butter, no added oils and no eggs. All ingredients are listed below and in the first step granola mixture.
If you love chocolate chip cookies, you will love these. I've prefected this recipe over the course of a couple of month or so now and this is the result.
Cookie base ingredients:
2/3 cup peanut butter
1/2 cup sucanat
1/2 cup honey
1/2 teaspoon sea salt
1 teaspoon baking powder
4 tablespoons cocoa
2/3 cup whole wheat flower
1/2 to 2/3 cup almond milk
1 cup Ghirardelli 60% cacao chocolate chips (I never use anything other than these chips)
Step 1: Making Granola.
Ingredients:
dash cinnamon
shelled sunflower seeds
pumpkin seeds
walnuts
almonds
coconut
1/3 cup raisins
rolled oats
Mix enough sunflower seeds, pumpkin seeds, walnuts, almonds and a little coconut together to get 1 cup of this mixture and grind up in a food processor a little finer than a typical granola. It may be necessary to double to 2 cups of this mixture as some food processors won't adequately grind just 1 cup.
Add 1 cup of this mixture to 1 cup of rolled oats, 1/3 cup raisins and add a dash of cinnamon. Set aside to use later.
Step 2: Cookie base:
2/3 cup peanut butter
1/2 cup sucanat
1/2 cup honey
Mix together until smooth. Add
1/2 teaspoon sea salt
1 teaspoon baking powder dissolved in a minimal amount of water
Mix in with cookie base. Add
2 cups of the previously made granola mixture
4 tablespoons cocoa
Mix together into cookie base and add just enough almond milk to make the mixture sticky. Add 2/3 cup whole wheat flour and more almond milk if needed to get mixture sticky and not dry. Finally, add 1 cup Ghirardelli 60% cacao chocolate chips. Mix thoroughly together.
Preheat oven and well seasoned cooking stone or non-stick cookie sheet to 350 degrees.
Spoon as many 1/4 cupfuls of this mixture onto preheated stone or cookie sheet and bake in oven for 7 to 8 minutes. You may need to make this in 2 batches if there isn't enough room on your stone or cookie sheet. If you use a cookie sheet instead of a stone, cooking time may increase slightly.
Makes 14 to 16 granola chocolate chip cookies.
