When we go out to eat, Alan will always check to see if he can order garlic mashed potatoes as a side dish because he absolutely loves those garlic mashed. Unfortunately you can never be sure what the restaurants are putting in their potatoes for flavors (along with hidden saturated fats and dairy). However, by making your own delicious garlic mashed potato recipe, you can enjoy delicious, guilt free flavor and nutrition.

In fact, potatoes are surprisingly nutritious. This is an added bonus since they are a staple vegetable in many parts of the world. Also, because they are a tuber they have a long lasting shelf life if stored in a cool dark place.

According to the world’s healthiest food web site:

“Potatoes as a very good source of vitamin C, a good source of vitamin B6, copper, potassium, manganese, and dietary fiber. Potatoes also contain a variety of phytonutrients that have antioxidant activity.”

One cup of baked potatoes supplies over 25% of the RDA of vitamin C and 21% of the RDA of vitamin B-6. Vitamin B-6 is necessary for many enzymatic activities that take place all over your body, including promoting the building of healthy cells, nervous system, neurotransmitter activity and cardiovascular health. So, it's okay to enjoy your garlic mashed potatoes as long as they don't have lots of sour cream and butter in them. You are doing something good for your body!

Garlic Mashed Potato Recipe

Serves 4-6

3 Large potatoes scrubbed clean
½ teaspoon sea salt
3 cloves garlic minced
Safflower oil (we use “high heat” safflower oil)

After cleaning the potatoes, cut into evenly sized chunks and place in a bowl.  Lightly sprinkle with oil, salt and garlic. Stir or work in with hands to coat potatoes thoroughly. Roast the potatoes at 450 degrees Fahrenheit for approximately 15-20 minutes, until very tender.

Take the roasted potatoes, place in your food processor with the S blade and puree. Add a little hot purified water if needed to create the consistency you are looking for. Taste and adjust flavors.
