Easy Thai Recipe – Raw Vegetable Pasta Recipe

This easy Thai recipe was inspired by the Thai Style Pasta Recipe in Kim Wilson’s raw food preparation book "Every Day Wholesome eating…In the Raw". (www.hacres.com).

Before we get on to this easy Thai recipe, here’s some interesting facts I discovered about Thailand and its cuisine…

Thailand, which means “Land of the Free”, was settled by explorers from India. Formerly known as Siam, it is located in the heart of Southeast Asia. It is surrounded by Cambodia and Laos on the East, Myanmer (Burma) on the West and Malaysia to its south.

The cuisine of Thailand has become a favorite throughout the world in recent years. Fish and rice are staples of the Thai diet. The distinct flavors of Thai cuisine come from lemon grass, garlic, coconut milk, ginger, turmeric, cumin and black pepper among others. Thai cuisine uses little meat as it is very expensive. Most meals are built around rice, but they also use noodles. A variety of sauces, like the one below, are used to flavor the rice or noodles.

This easy Thai recipe is actually a raw food recipe. Rather than using rice or noodles, this entrée is built around a potpourri of raw vegetable pasta. The vegetables are cut into different textures and shapes for variety and then tossed in a raw Thai inspired creamy sauce. In this raw recipe you can enjoy all the flavor and aroma of Thai cuisine and enjoy all the health benefits of eating raw.

Easy Thai Recipe – Thai Inspired Raw Vegetable Pasta

Serves 4 as an entrée

Thai Sauce ingredients:
½ cup soaked almonds
2 soaked dates
2 tablespoons coconut oil
½ cup purified water
3 tablespoons tahini
½ teaspoon sea salt
Juice of ½ lemon
Juice of ½ small orange
1 inch peeled ginger
1 large clove garlic

Place all the ingredients for the sauce in your blender. Blend until very smooth and creamy, but fairly thick. Add more purified water as needed to obtain the desired consistency for tossing with your potpourri of vegetables.

Vegetable pasta suggestions – prepare 4 -6 cups vegetable pasta
Angel hair zucchini (made with Spiralizer)
Thinly sliced red and green peppers
Matchstick julienne carrots (made with mandolin)
Sliced green onions
Broccoli flowerets
Diced Avocado
Other season vegetables you have on hand

Place vegetables in a large bowl and toss with the easy Thai recipe sauce.

Arrange vegetable pasta tossed with the Thai sauce recipe on plates. Sprinkle with chopped soaked almonds and cilantro or lemon grass if desired.
