It’s hard to find someone who doesn’t like a cole slaw recipe. However, my observation is that people tend to be very particular about their cole slaw.
Cole slaw can quickly become a very unhealthy recipe with the amount of mayonnaise and dairy that goes into some recipes. This delicious slaw recipe is healthy, unique and colorful. It is sure to please your taste buds.
This cole slaw recipe is a variation on my simple red cabbage recipe. But it too is quick, easy and inexpensive. I will often vary the ingredients depending on what I have on hand, but the one’s listed below are my favorites.
Delicious Cole Slaw Recipe
Preparation time: 10 Minutes
Serves 6-8 as a side dish
Ingredients
1 medium head red cabbage
¼ cup julianned golden beet (substitute turnip or parsnip)
½ cup diced red peppers
1/3 cup diced green peppers
1 medium carrot shredded
½ tablespoon sesame seeds
1 ½ teaspoon sesame oil
½ - ¾ cup Spicy Oriental Cole Slaw Dressing
Remove outer leaves of cabbage and rinse the head. Cut cabbage into wedges that will fit easily into the feed tube of your food processor. Using the slicing disc blade, gently feed cabbage into food processor and slice as thinly as possible (the less pressure you use the thinner it will slice).
Use the match stick size Julianne blade on your mandolin to slice the golden beet. Use the shredder disc blade to shred carrot.
While preparing vegetables gently toast sesame seed in a small frying pan over medium heat for approximately 4-5 minutes.
Place prepared cabbage, beet, peppers and carrot into a large bowl and gently toss with Spicy Oriental Cole Slaw Dressing. Sprinkle with sesame oil and sesame seeds and toss again. Place in serving bowl, cover and refrigerate. This recipe will keep 5 or more days in the refrigerator.
