One exception to the rule however is juicing. When carrots are juiced the fiber is removed and therefore 100% of the beta-carotene is available at the cellular level. So juicing your carrots ensures you are getting the most nutrition from them.

Carrot Salad Recipe

Serves 8-10 as a side dish

First:

Shred 4 Large organic carrots (4-6 cups shredded carrots) into a large bowl and stir in ½ - 2/3 cup raisins.

Next:

Whisk the following ingredients together in a small bowl
¼ cup olive oil
3 Tablespoons apple cider vinegar (can substitute lemon juice)
1 ½ to 2 tablespoons honey
¼ teaspoon sea salt or ½ teaspoon Braggs aminos
¼ cup purified water

Make sure that the honey is thoroughly incorporated. Taste and adjust flavors to suit your taste.

Toss carrots and raisins with the salad dressing marinade and let marinate for 1 hour before serving.
