Broad beans with olive oil, coriander and lemon juice and more. This recipe is from www.cookican.com (cook I can)
Ingredients
7 cups of broad beans (Fava Beans) with their pod (shell) cut 1 to 1 1/2 inches in length
3 tablespoon minced garlic
1 cup fresh coriander leaves, finely chopped (also called cilantro)
1 1/2 teaspoons salt
1/4 teaspoon allspice
1/8 teaspoon black pepper
1/3 cup of olive oil
3 tablespoons of lemon juice
1 cup yogurt (you will need the yogurt when you are ready to eat)
Directions
1. Get a medium sized pot (or large wok) to sauté on medium heat. First put the olive oil and let heat it for a few seconds and then add garlic and let it cook for less than a minute. Don’t let the garlic burn. Then add half the coriander (cilantro) let it quick for 30 seconds or so and then add the fresh broad beans. Then add all your spices. Let the bean mixture cook for 5 minutes. Then put it on low and cover it for 20 minutes.
2. After it has cooked, turn the heat off and put the lemon juice on the bean mixture.
3. Put the bean mixture in a serving plate. Then garnish with coriander (cilantro).
4. The 1 cup of yogurt is to be eaten with your dish. Each person can put some yogurt on their Fool Moukala in their plate.
Just Info: The Fool Moukala can be eaten with Arabic bread (Pita Bread). You can also decorate it with lemon pieces on the side and some like squeezing lemon while eating it.
