Healthy Granola Chocolate Chip Cookie Recipe

Hi,

I'll bet you thought that once you started eating a healthy diet there wasn't any room for chocolate any longer. That isn't necessarily the case and especially with these delicious cookies listed below, you can have your chocolate and eat it too.

I've been working for some time on this cookie recipe to get it perfect (or at least as close as you can get to perfection) and I think it's finally just right, and we hope that you think the same.

Granola Chocolate Chip Cookie Recipe
This recipe is a little complicated to make but, it is certainly worth the extra effort and hopefully that will be reflected in their taste. The effort you expend will be all the easier as well when you know that there aren't any eggs, butter, or added oils in these cookies. They are about as healthy as you can make a cookie such as this.

We probably could have called these peanut butter chocolate chip cookies because they contain 2/3 a cup of peanut butter and if you don't want as much peanut butter in the recipe you can do as I did when first making them, just substitute 1/3 cup tahini for half of the peanut butter.

There are basically 3 steps in making these cookies. The first step is making the granola that sets these cookies apart. The next step is mixing all the ingredients together and the final step is of course baking the cookies.

To make the process easier you can make a large batch of granola, 2 or 3 times as much as you need, and then save that mixture for the next time you want to make this recipe. I think you'll enjoy these cookies so much, there might not be that much time between batches. The recipe makes about 14 to 16 cookies or about 12 if you make them a little larger like we do.

It usually takes us about 3 to 4 weeks to get through this current size batch. However, we only eat 1 to 2 cookies a week so you will have to determine how much you can control your cravings for these delicious treats.
